You can update you Wait Times during the day, however when an order is created it captures the settings that were in OrderCloud at the time the order is placed. If you are using the setting to send the order to the system at Prep Time and you have a customer that placed an order earlier in the day before you adjusted the Wait Times, that specific order will be sent to the system at the original Wait/Prep Time that was set.
